XO Sauce Chicken Puffs XO醬雞肉酥

Anyone like me that love to add XO sauce in everything…fried rice, noodles, porridge etc. They are the sauce made with dried scallops, chilli, dried shrimps, it might taste weird for some people but I just LOVE it!

This time I make these chicken puff with xo sauce, it is like the bbq pork puff dim sum with little twist. They are so easy to make and xo sauce just make the world more beautiful! Try and I am sure you will love it too! 

在外地生活多年,總有幾樣”充滿家的味道” 的東西跟著我。其中XO醬是我的最愛,每次回香港都必定買幾樽帶回家。每次吃麵、雲吞、炒飯都必定要加XO醬,就連英國人Mr P也會什麼都加點XO醬提味。
 
雖然好多人都自己整XO醬,但我這邊材料有限,買現成的就最方便。喜歡李錦記XO醬,味道不太鹹不太辣,很多上等江瑤柱絲,有口感而且超好味!
 
用XO醬來烹調更可提升味道層次。這次就用了XO醬做這個雞肉酥,金黃香脆的酥皮,裡面包著XO醬和雞肉,完美的配搭,立刻將這個平凡的雞肉酥升格。做法超簡單,做下午茶茶點或派對小食,必定大受歡迎!
 
Marinate the minced chicken for 30 minutes. 
 
Add oil in hot pan, cook the onion until soften, then add in chicken, cook until fully cooked. Add in XO sauce, mix well and set aside. 
 
Bring the puff pastry to room temperature, cut the pastry into square or round square (whatever size you desire). Put a tablespoon filling in the middle, brush egg wash around the edges. 
 
Fold it and press it with a fork. Brush egg wash on top of the pasty, sprinkle with some white sesame seeds. Bake in preheated oven at 180C , bake for 15 -18 minutes or golden. Enjoy! 
 
先將雞肉切碎,再用醃料醃雞肉30分鐘. 
 
燒熱鍋後下油,炒洋蔥至軟身,然後加入雞肉,炒至全熟. 加入XO醬拌炒均勻,盛起,待涼備用. 
 
將急凍酥皮放在室溫中回軟,印出圓形或正方形,將餡料放在酥皮中間,在四周塗上蛋液. 
 
將酥皮對摺,用叉壓實封口,再在酥皮上面塗一層蛋液,灑上白芝麻. 放入已預熱180C焗爐,焗約15-18分鐘或至金黃色即成!

Ingredients
  • 1 pack puff pastry
  • 200 g minced chicken
  • 1/4 onion, chopped
  • 2 tbsp xo sauce
  • egg wash
Marinate
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 tsp corn starch
材料
  • 1 酥皮
  • 200 免治雞肉
  • 1/4 洋蔥(切碎)
  • 2 湯匙 XO 醬
  • 蛋液
醃料
  • 1 湯匙 生抽
  • 1 茶匙
  • 1/2 茶匙
  • 1 茶匙 生粉
Instructions
