Homemade Vietnamese Pork Roll (Cha Lua) Noodles Salad

Ingredients
  • 500 g Minced Pork 免治豬肉
  • 2 tbsp Fish Sauce 魚露
  • 1/4 tsp White Pepper 白胡椒粉
  • 1 tsp Sugar 糖
  • 1/4 tsp Salt 鹽
  • 1 tsp Baking Powder 泡打粉
  • 1 tbsp Corn Starch 粟粉
  • 50 ml Cold Water 凍水
Sauce
  • 3 tbsp Sugar 糖
  • 125 ml Water 水
  • 3 tbsp Lime Juice 青檬汁
  • 4 tbsp Fish Sauce 魚露
  • 3 gloves Minced Garlic 蒜蓉
  • 2 Birdeye Chilli 辣椒
Instructions
  1. Marinate the minced pork with all the seasonings. Mix well and put the pork into ziplog bag, flatten it and freeze for 1 hour.

  2. After an hour, take the pork out and put in food processor. Blend the pork for few minutes until very smooth, it should look quite pale pink colour.

  3. Then put the pork on cling film (traditionally they use banana leaves) and roll it into cylinder tightly.

  4. Steam for 25-30 minutes. Let it cool then slice it.

  5. For the sauce, mix all the ingredients together and enjoy!
