Tomato Soup 蕃茄濃湯
Nothing more comforting than having homemade tomato soup for a long day. Very simple, healthy and nourishing meal, alongside with some croutons or toasts, quick, light and delicious dinner.
Autumn is here, the soup season begins! It is sooooooo great and comforting to have a bowl of warm soup after a long day. Nothing simplier than classic tomato soup, not too heavy yet filling.
I love to put a lot homemade croutons in the soup. (you can find the recipe on my blog here) You can use fresh or tinned tomato, for me, both are great. Add little cream (not guilty!) and make it so rich and creamy. You can put the soup in fridge and bring it to work the next day, simple microwave it and you will have a perfect lunch.

這個西式蕃茄湯Tomato Soup在西餐廳經常會有,可用新鮮或罐頭蕃茄,再加淡忌廉,好creamy喔!
做法超簡單,煮一大鍋,再加酥脆的麵包粒享用,大滿足!
Heat oil in hot pot, cook the chopped onion for 3 minutes, then add carrot and garlic and cook for 2 minutes.
將洋蔥,紅蘿蔔切小塊,蒜頭切碎。熱鑊後下油,先煮洋蔥約3分鐘至軟身,然後下蒜蓉及紅蘿蔔,煮兩分鐘。
Add chopped tomatoes, chicken or vegetable stock and bay leaves. Season with salt and pepper, bring it to boil, then turn to low heat to cook for 20 minutes.
下蕃茄粒及雞湯,下月桂葉,少許鹽及黑胡椒粉拌勻,煮沸後,轉小火煮20分鐘 (用新鮮蕃茄也可,將蕃茄切小塊)。然後拿出月桂葉,將蕃茄湯倒入攪拌器,或用手提攪拌器將湯攪打均勻。將湯倒回鍋內,下淡忌廉拌勻(可省略),再煮兩分鐘即成!
Remove from heat, take the bay leaves out, then pour the soup into your blender, or hand blender, to blend the soup until smooth. Put the soup back to the pot, add some cream and cook on medium heat for 2 more minutes. Serve with homemade croutons or bread.
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 800 gram tomatoes, chopped
- 300 ml chicken or vegetable stock
- 4 tablespoons double cream
- 2 bay leaves

- 洋蔥 -1個 (切碎)
- 蒜蓉 -2瓣
- 紅蘿蔔 -1條 (切碎)
- 蕃茄粒 -800克
- 雞湯 -300毫升
- 月桂葉 -2片
- 淡忌廉 -4湯匙
