Chinese Almond Cookies 中式杏仁酥
Classic Chinese cookies – Almond cookies, I remember when I was kid, every time we went to those old style pastry shops, I always love to buy these little cookies, with almond and walnut flavour. They are so delicious and melt in your mouth.
It is actually really easy to make, perfect for afternoon tea snack or little gift to your friends.
Chocolate Meringue Cookies 朱古力蛋白霜脆餅
Every time when I make custard or anything that need a lot of egg yolks, I will have to find a way to use up all the leftover egg whites. I usually will make meringue cookies, cause it is so easy , only need two ingredients and can use a lot egg whites.
You just need to beat the egg whites with sugar till stiff peak, pop in oven and bake for over an hour. Then you will have crispy on the outside, marshmallowy in the inside. So yummy! Try to create different favours and be creative!
Ginger Cookies (Gingernuts) 薑餅曲奇
Who love ginger cookies? British like to call it gingernuts but there are no nuts in it. I love it when I was a kid, they are buttery cookies with hints of ginger favour. Not too spicy but super delicious.
They are so easy to make and this time, I am very happy how they turn out. They are all even size and shape, the crack on top are just beautiful. Very easy to make, if you like ginger biscuits, you have to try it!
No-bake Biscoff Cheesecake 免焗芝士蛋糕
Is there anyone like me that obsessed with these Biscoff cookies? (or butter cookies in the States) They are so buttery with special favour that I can’t tell what it is, they are just so yummy and I can’t stop eating it.
This time I made a no-bake cheesecake with Biscoff biscuits favour. They are so creamy, rich, sweet and just heavenly! Of course you can use any other biscuits and spread instead, they will be lovely anyway! I love to put no-bake cheesecake in a cup, is easy to serve and no gelatine needed. I always worry the gelatine can’t set properly or has lumps. So this cheesecake cups just perfect!
Peanut Butter Cookies 花生醬曲奇
What else you like to use with peanut butter besides spreading on bread? I love to add it in my milkshake, or just eat it as it is 😛 Of course, it is easy to use it to make cookies too. Before I shared the recipe of 3-ingredient peanut butter cookies, they are simple and delicious.

This is one of my favourite cookies, every time when I bought a tin of assorted cookies, I must eat the chocolate almond one first 🙂
The buttery cookies with cocoa flavour, add in some almond slices…it is just delicious! Super easy to make, you can freeze the cookie dough in freezer and whenever you crave for these cookies, just slice it and bake it!
Purple Sweet Potato Pastry 紫薯一口酥
Purple sweet potato again! How lovely are these little pastry! Very delicious short crust pastry with purple sweet potato filling. Not too sweet but very healthy and yummy!
It is very easy to make, you can make more and store the dough in freezer. You can make it whenever you like, and definitely try with different filling…red bean paste, chocolate, jam….all good! Enjoy!
Easy Chocolate Cookies 簡單巧克力曲奇
Who can resist delicious chocolate cookies? Chewy, crunchy, gooey…just fit everyone. This is very easy chocolate cookies recipe, with a hint of spiciness, something hot!
This recipe is very basic, to keep all the cookies at same size, just roll the dough into a same weight balls. To add additional flavour, roll the dough into cinnamon , sugar and chilli powder (if you fancy) . Perfect cookies for any time!
Easy Earl Grey Tea Cookies 伯爵茶牛油曲奇
In winter, it is the best to have a cup of tea under the duvet. Beside English breakfast tea, earl grey tea is one of my favourite. Put some earl grey tea into butter cookies, it is just delicious!

YAY! Finally Christmas is here!!!! (almost!) It is time to do some baking…snowball cookies is my favourite thing to bake. They are so adorable, just like snowball isn’t it?! They are actually melt in your mouth, SUPER yummy!
