Strawberry Muffins 草莓鬆餅
Super moist, light and delicious muffin, without butter. Super easy to make, no mixer needed. Perfect for breakfast and tea time!
This is my all time favourite muffin recipe, I will only use this recipe for my muffin. It is the best, so why change right!? I found that muffin made with butter, is kind of like cupcake. But this recipe with oil, make the muffin so light, moist and healthier. Add chocolate chips, blueberries, cranberries, apples…anything you like. This time I put strawberries in it, the fruit just make the muffins even moister!
You don’t need any handmixer to do it, I just need spatula. Only takes 40 minutes , 4 steps and few simple ingredients to make. Please try and you will not buy any store-bought muffin anymore, trust me!

Mix the flour, sugar and baking powder together in a large bowl. In another bowl, mix the beaten eggs, milk and oil together. Then add the egg mixture into dry ingredients and mix well.
Pour the batter in a muffin tin, add some chopped strawberries and sprinkle some brown sugar on top. If you want the muffin has a big head, like a mushroom, you can pour the batter till the top on the lined paper. Bake in preheated oven at 220C, for 20 to 25 minutes! Done!
在大碗內,先將麵粉,糖及泡打粉拌勻。用筷子打發均勻雞蛋,然後與牛奶及植物油拌勻 (粟米油,芥花籽油,或橄欖油等)。然後將蛋液倒入麵粉內拌勻。
將麵糊倒入馬芬模具內,再加草莓塊,再灑少許紅糖在上面。 *要做到磨菇大頭馬芬,就要將麵糊倒至滿滿(如圖)。放入已預熱220度焗爐,焗20至25分鐘即成!
- 200 gram all-purpose flour
- 90 gram sugar
- 10 gram baking powder
- 100 ml milk
- 80 ml oil
- 2 eggs
- 160 gram strawberries, chopped
- brown sugar

- 泡打粉 -10克
- 牛奶 -100毫升
- 植物油 -80毫升
- 雞蛋 -2隻
- 草莓 -160克
- 紅糖 -適量
