Steamed Glutinous Rice (Sticky Rice) 蒸臘味糯米飯
You can always find this sticky rice dish on Dim Sum menu, with Chinese sausages, shiitake mushroom and curd meat. Hong Kong people we love to have it during winter, it make you feel so warm and comforting.
Usually people stir-fry the sticky rice, but for less oily and simplier verison, I just steam the rice but it taste as good. Soak the glutinous rice for few hours or over night, then steam it and add in all ingredients and seasoning. You will have a big pot of sticky rice to feed the whole family.
It is very easy to make, with few classic Chinese ingredients : Chinese sausages, curd meat, dried shrimps and shiitake mushrooms. Try and you will love it!
冬天最好是吃熱騰騰的臘味糯米飯,充滿臘味香,美味又暖胃。街外吃的都是生炒糯米飯,用大量油炒,較油膩,這個是蒸的版本,少油較健康,蒸就可以,不用炒,簡單易做,一大鍋,全家都喜歡!
Heat oil in hot pan, cook the Chinese sausage, curd meat, dried shrimps and shiitake mushrooms for few minutes, set aside.
將臘腸,臘肉,冬菇切粒,芥蘭切細片備用。熱鑊後下油,先炒臘腸臘肉及蝦米數分鐘,盛起備用。
Soak the sticky rice in water for at least 5 hours or even overnight. Drain it, then add water to steam it for 15 minutes. Then use chopsticks to stir the rice and add the cooked ingredients. Steam for 10 more minutes.
將糯米洗淨,用開水泡浸五小時或過夜,然後瀝乾水份。放入蒸鍋,用中火蒸15分鐘。用筷子弄散糯米,然後下臘腸臘肉粒,香菇及蝦米,與糯米拌勻,再蒸10分鐘。
Add the Kailan and steam for 3 more minutes, then add all the seasoning and mix well, sprinkle with some spring onions then it is done!
再下芥蘭粒,再蒸三分鐘。然後下所有調味料拌勻,下花生,灑上蔥花即成!
- 300gram sticky rice
- 2 Chinese sausages, chopped
- 1/2 Chinese curded meat, chopped
- 20 gram dried shrimps
- 8 shiitake mushrooms, chopped
- Kai Lan, chopped
- Spring Onion, chopped
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt

- 糯米- 300克
- 臘腸- 2條
- 臘肉- 半條
- 芥蘭- 適量
- 蝦米- 20克
- 冬菇- 8隻
- 蔥花- 適量
- 調味料:
- 生抽- 1湯匙
- 老抽- 1湯匙
- 糖- 1茶匙
- 鹽- 1/2茶匙
