Soft Pretzels 蝴蝶餅麵包
Making your own pretzels at home is easier than you think! A chewy crust with a crunchy top with sea salt. Salty, so addictive and delicious! Grear for snack or breakfast!
I like the shape of ths pretzels, look like butterfly! Pretzels have two kinds, soft and hard. The hard one is smaller and is crunchy snack. The soft one is chewy and crunchy on the outside, top with sea salt mostly. The texture is like bagel, you can have it for snack or for breakfast.
To make the pretzel has the chewness, is to cook the dough first with water, baking soda and brown sugar. This will give the dough the brown shiny color and chewy texture. Just like making bagel, it is easy!
這個在美國十分流行的蝴蝶餅麵包Pretzel,形狀有點像蝴蝶,分軟硬兩種。這個是軟的,口感像貝果bagel,有煙韌口感,做法也很相似。 這是用中筋麵粉做的,在麵包上灑上鹽,咸咸的,作早餐及點心超美味喔!
Mix the flour, yeast, sugar and salt in a bowl together, then gradually add in water to form a dough. Tip the dough on floured worktop, then knead the dough for 10 minutes or until the dough is smooth and elastic. Put the doughin lightly oiled bowl, cover with cling film and let it set for 1 to 2 hours, until the dough double in size.
在大碗內將麵粉,酵母,糖及鹽拌勻,然後逐少加水拌勻,成麵團便可。將麵團放在灑有麵粉的枱上,大力搓麵團10分鐘,至麵團表面光滑及有彈性。將麵團放入塗有油的大碗內,用保鮮紙封口,靜至, 至兩小時,麵團會脹大一倍。
Knock the dough down and release the air. Divide the dough into 8 equal pieces. Roll each dough into a rope about 40 cm long, then shap the pretzel shape. Place on lined baking sheet with parchment paper, cover with cling film and let it set for 30 minutes.
In a large pot, add in brown sugar and cook on medium heat. Once the sugar is dissolved, add in baking soda, the water will double in volum, then turn it heat low to simmer. Add one or two pretzel into a pot, cook for 30 seconds, then place it back on baking sheet.
在一大鍋內,用中火煮沸一鍋水,下紅糖煮溶,然後下蘇打粉,水會上升一倍。轉小火,放下一至兩個麵團,煮30秒,然後放回烤盤內。
Brush some egg wash on the pretzels, sprinkle with some sea salt. Bake in preheated oven at 220C for 12 to 15 minutes, until the crust is golden brown.
在麵團上塗一層蛋液,灑少許粗鹽,放入已預熱220度焗爐,焗12至15分鐘,至金黃色即成!
- 300 gram all-purpose flour

- 8 gram salt
- 15 gram sugar
- 240 ml water
- 30 gram baking soda
- 1 tablespoon brown sugar
