Singapore Stir-fried Noodles 星洲炒米
Funny that Singapore noodles are actually not from Singapore. When I lived there for a year, there are nothing like this noodles dish. This is a very local and popular Hong Kong dish that you can have it in local restaurants.
The noodles are rice vermicelli, simply soak the noodles in water for 15 minutes, it will softened and ready to cook. It only takes few minutes to cook, perfect for stir-fried or with soup.
The yellow colour of the noodles come from the curry powder, very aromatic but not spicy. Cooked with shrimps, BBQ pork, bell pepper, or add whatever you like. Very easy, simple, quick dish, perfect for week night dinner!
星洲炒米不是來自星加坡的,之前住在星加坡,也從未吃過星洲炒米呢!就像廈門根本沒有廈門炒米一樣。
香港的其中經典炒麵,茶餐廳和酒樓都會有,加入咖哩粉炒香,帶點黃色。加入叉燒,鮮蝦和其他蔬菜,炒一 炒便成。非常簡單又美味的炒米粉,15分鐘就做到,方便又開胃!
Soak the rice vermicelli noodles in water until softened, drain well.
Add oil in hot wok, cook the shrimps until it turn pink, set aside.
Then cook the eggs and slice it thinly.
Add more oil in a wok, cook the bell pepper for few minutes, season with salt. Then add in BBQ pork and rice vermicelli noodles and all the seasoning. Add little bit water if it is too dry.
Return the shrimps and eggs into the noodles, stir-fry for 2 minutes, done!
用開水先將米粉浸軟,瀝乾水份備用。 熱鍋後下油,先炒鮮蝦,下鹽和胡椒粉調味,盛起備用。
再下點油,下打發的雞蛋,煎成蛋餅,再切絲備用。
再下洋蔥和甜椒,炒兩分鐘至軟身。下叉燒和米粉,炒一分鐘,再下所有調味料,炒勻。
最後加入鮮蝦和雞蛋絲,炒均即成!(如太乾,可加點水)
- 150 gram rice vermicelli noodles
- 2 eggs, beaten
- shrimps
- BBQ Pork
- 1/4 each bell pepper, green & red
- 2 tablespoons curry powder
- 1 teaspoon sugar
- 1/2 teaspoon salt

- 米粉 150克
- 雞蛋 2隻
- 鮮蝦 數隻
- 叉燒 適量
- 青/紅甜椒(切絲) 各1/4個
- 咖哩粉 2湯匙
- 糖 1茶匙
- 鹽 1/2茶匙
