Scallion Pancakes 蔥油餅

I bought a big bunch of scallion last week, what is the best way to use up the scallion? I suddenly craving for the scallion pancakes, I love it so much when I was kid. The pancake is full of scallion, very flaky, simple but delicious.

It is super easy to make, flour, salt, water to make a dough, plus some scallion. Pan fry it, dip with some soy sauce or chilli oil…mmm..perfect snack!

上星期買了一大札蔥,最好就是做蔥油餅。香酥又酥化,充滿蔥香,超好味!

做法超簡單,麵粉、鹽、水做麵糰,再加入大量蔥花,再煎,就成超好味的小食,大家一定要試試!

Mix flour and salt in a large bowl, then gradually add in hot water to form a dough.

Sprinkle some flour on worktop, then knead the dough for 5 minutes or until smooth. Place it in a plastic bag or cover with cling film, let it rest for 30 minutes.

Divide the dough into 6 pieces, roll it into cylinder, then roll it into a disc. Then roll again into a long shape, brush some oil and sprinkle the scallion on top. Roll it into cylinder, then roll it into a disc. Flatten it into flat circle.

Add some oil in a pan, then place the pancake in it and cook under medium heat, for about 3 to 4 minutes, or until golden. Enjoy!

將麵粉和鹽放在大碗內拌勻,然後逐少加入熱水拌勻 (*如麵糰太乾,加點水,太濕就加點麵粉,要自己用手感受)

在枱上灑少許麵粉,用手搓麵糰將5分鐘,或至麵糰表面光滑,放在袋或用保鮮紙包好,靜置30分鐘

將麵糰分成6份,擀成長形,捲成長條狀,然後捲成圓餅狀. 再重新擀成長形,在上面塗一層油,灑上蔥末。捲成長形,再捲成圓餅狀,再擀一擀

在熱平底鑊內加點油,用中火煎餅每邊約3-4分鐘,至金黃香脆即成!
