Rock Cakes 英式石頭小蛋糕

One of the classic British afternoon treat – Rock cake. Also is Mr P’s childhood treat! This cake introduced during World WarII while egg, flour, sugar are in ration. So people like to make this rock cake as it required less sugar and egg. Also the look of the cakes look like a rock, so there is rock cake.

The ingredients are very simple, and it exactly the same way as you make scone. They are hard at the outside and crumble inside. It doesn’t look very appealing but it taste really good!

Mr P 童年的其中至愛– 英式石頭蛋糕!這個石頭蛋糕,外形像石頭,像迷你英式鬆餅。是二次世界大戰時,因為物資有限,而這個小石糕相比普通蛋糕用相對少的雞蛋和糕,所以就成為當時珍貴的蛋糕。

英國很多老人家都喜歡做這個甜點,做法和材料都非常簡單,出奇地好味!

In a large bowl, mix flour and sugar together. Then add in cubed butter, use hands to crumble it.

Then add in egg and milk, mix well.

Add in dried fruit, mix well.

Divide the dough into small pieces. Place on lined baking sheet. Pop in preheated oven at 180C, bake for 15-18 minutes or until golden.

*This recipe can make around 12 little cakes

在大碗內,將糖、麵粉和泡打粉拌勻。加入小塊牛油,用手擠碎、拌勻成

加入雞蛋和牛奶,拌勻。再加入生果乾,拌勻。

將麵糰分成小份,放在鋪有烘焙紙的焗盤上,放入已預熱180度焗爐,焗約15-18分鐘即成!

*這個食譜可做約12個小蛋糕

  • 230 g Plain Flour 中筋麵粉
  • 2 tsp Baking Powder 泡打粉
  • 80 g Sugar 糖
  • 110 g Butter 牛油
  • 1 Egg 雞蛋
  • 1 tbsp Milk 牛奶
  • 110 g Raisins 提子/生果乾
Instructions
