For the butter milk, add 1/4 teaspoon of lemon juice into milk, mix well and set aside for 5 minutes. Then add the red food coloring.
Cream the butter and sugar in a bowl until smooth and fluffy. Add in eggs and butter milk. Then sift in flour, baking powder and cocoa powder. Mix until well combind.
Mix the baking soda into vinegar, add in batter. Divide the batter into lined cupcake tin, pop in preheated oven at 170C, for about 20- 22minutes.
For the cream cheese frosting, beat the cream cheese with butter, until smooth and fluffy. Then sift in icing sugar until smooth.
Let the cupcakes cool completely, then pipe the cream cheese frosting.
酸奶butter milk做法:將10毫升的牛奶加入1/4小匙檸檬汁,拌勻,靜置五分鐘。然後下紅色食用色素拌勻,備用。
用電動打蛋器打發牛油和砂糖,然後下雞蛋和酸奶拌勻。篩入麵粉,泡打粉和可可粉拌勻。再加入步驟一的酸奶拌勻。將白醋與梳打粉拌勻(會有泡沫出現),再入蛋糕糊內拌勻。
將蛋糕糊倒入杯子蛋糕模內(3/4高度),放入已預熱170度焗爐,焗約20-22分鐘,或至蛋糕全熟。
忌廉芝士糖霜cream cheese frosting做法:用電動打蛋器打發牛油和忌廉芝士,約一分鐘至非常幼滑,然後加入糖粉拌勻。
待蛋糕完全待涼後,將cream cheese frosting 放入擠花袋內,剪去小角,擠上糖霜即成!
- 130 gram unsalted butter
