Red Velvet Cupcake 紅絲絨杯子蛋糕
Usually I don’t really like to eat cupcakes, I mean they look really pretty but the giant dome of buttercream put me off a little. The only cupcake I like is red velvet cupcake with cream cheese frosting. Very airy and moist cake with not too sweet cream cheese frosting on top, perfect treat!
非常受歡迎的紅絲絨杯子蛋糕 Red Velvet Cupcake, 這個紅紅的蛋糕,就像紅絲絨子般。非常鬆軟的蛋糕,加了可可粉,再在上面加上乳酪糖霜cream cheese frosting. 清新不膩,紅色蛋糕超浪漫,情人節杯子蛋糕很應節呢!
Mix milk and lemon juice, leave it for 10 minutes.
Cream the butter and sugar for a minutes, add in eggs, mix well. Sift in flour, baking powder and cocoa powder, mix well.
Add in red food colouring and milk mixture, then add in baking soda+vinegar.
Evenly divide the batter into lined muffin tins. Pop in preheated oven at 170C, bake for 20 minutes or until fully cooked. Let it cool completely.
For Cream Cheese Frosting: Beat butter and cream cheese until smooth. Then sift in icing sugar and beat for 2 minutes until pale. Put the frosting into piping bag and decorate on cupcakes! Enjoy!

cream cheese 糖霜做法:用電動打蛋器打發牛油和忌廉芝士,然後篩入糖霜,打發兩分鐘至全白色. 將cream cheese 糖霜倒入擠花袋內,在放涼的蛋糕上擠上花紋裝飾即成!
