Red Bean Paste Pancake 豆沙鍋餅

Every time when I go to Shanghainese restaurant, I must order this snack/ dessert. How can a pancake wrapped with red bean paste can be THIS delicious! Luckily, we can make it at home in 30 minutes. So easy and as delicious as in restaurant!
上海的經典小食/甜點,每次到上海餐廳都必定點這道。其實就是中式薄餅,再包入豆沙餡料,再炸至金黃香脆。超美味的中式甜品!
做法超簡單,也可用煎的方法代替油炸。一定要試試!
Beat the egg, then add in flour and water, mix it smooth.
Add oil in hot pan, remove from heat and quickly smooth the batter in a pan evenly. Cook the pancake under medium low heat, cook for about 45 seconds to 1 minute, both sides.
Put the red bean paste on the pancake, fold it like an envelop. Add more oil in a pan, then fry the pancake until golden and crispy.
先打發雞蛋,然後篩入麵粉,加入水,拌勻至沒有粉粒。
燒熱鑊後下少許油,用廚紙抹鑊,離火,下麵糊,快速將麵糊平均在鑊內,用中小火煎約45秒至一分鐘,再將薄餅反轉再煎另一面。
將豆沙塗在薄餅中間,然後將薄餅摺成信封狀,在鑊內再下多些油,用半煎炸的形式把薄餅煎至金黃色,再切件享用。

- 170 ml water
- 200 gram red bean paste
