Pistachio series — continue!!!! Lately I been making pistachio ice-cream, financiers, cookies….It is time for pistachio cake! It is super easy to make and everyone loves it!

This definitely is a delightful treat that combines the nutty, rich flavor of pistachios with the moist, tender crumb of a perfectly baked cake. Whether you’re looking to impress guests at a dinner party or simply indulge in a sweet treat at home, this pistachio cake is sure to satisfy your cravings. 蛋糕充滿堅果香氣與蛋糕濕潤柔軟的質地完美結合。鬆軟好味,我還在上面加了檸檬糖霜,更清新好味!不用牛油,感覺健康點!再配一杯熱茶,完美的下午茶!

Blend the pistachio into very fine pieces. Set aside.

In a large bowl, mix with eggs, oil, milk and yogurt together.

Then sift in sugar, flour, baking powder, baking soda and pistachio. Mix until well combined.

Pour the batter into lined loaf tin, pop in preheated oven at 180C, bake for 50-60minutes, or until fully cooked. Let it cool completely.

For the lemon icing, mix icing sugar and lemon juice. Then pour on the cake, add more pistachio on top. Enjoy!

將開心果打成顆粒狀,備用。

在大碗內,將雞蛋、菜油、牛奶和乳酪拌勻。

再篩入糖、麵粉、泡打粉、梳打粉和開心果碎,拌勻。

將蛋糕糊倒入鋪有烘焙紙的焗盤內,放入已預熱180C焗爐,焗50-60分鐘或至全熟,待涼。

將糖霜和檸檬汁拌勻,再將糖霜鋪在蛋糕上,再加點開心果碎作裝飾即成!

Ingredients
  • 120 g Pistachio 開心果
  • 3 Eggs 雞蛋
  • 125 ml Vegetable Oil 菜油
  • 60 ml Milk 牛奶
  • 80 g Yogurt 乳酪
  • 180 g Plain Flour 中筋麵粉
  • 210 g Sugar 糖
  • 1/2 tsp Baking Powder 泡打粉
  • 1/2 tsp Baking Soda 梳打粉
Lemon Icing 檸檬糖霜

  • 1-2 tbsp Lemon Juice 檸檬汁
