Orange & Cranberry Muffins 香橙紅莓鬆餅
While summer is here, I always feel like something light. Not a creamy cake full of icing but refreshing light and moist muffins.
This muffin recipe use vegetable oil instead of butter, it makes it taste lighter and slightly healthier. Add some orange zest and orange juice, with some dried or fresh cranberry. Very refreshing and delicious. Super easy to make, no mixer needed. Try and hope you like it!

Beat the eggs and mix with milk, orange juice, vegetable oil and sugar.
Sift in flour and baking powder, mix well. Add in orange zest and dried cranberry, mix well.
Pour the batter into muffin tins, sprinkle some brown sugar. Pop in preheated oven at 200C, bake for 20-25 minutes.
If you want, you can mix a tablespoon of water (or more if needed) with icing sugar, drizzle on top of muffins.
*this recipe can make 6 muffins
用筷子打發均勻雞蛋,然後下牛奶、橙汁、植物油和糖拌勻 (粟米油,芥花籽油,或橄欖油等)
然後篩入麵粉和泡打粉,拌勻. 加入橙皮屑和紅莓,拌勻.
倒入模內,可在上面加點紅糖,放入已預熱200度C焗爐,焗約20-25分鐘
也可有加上糖霜 (糖霜icing sugar 80克+1湯匙水拌勻)
*這個食譜可做6個鬆餅
*可加自己喜歡的材料如巧克力碎片,蔓越莓,藍莓等
*因各焗爐火力不同,鬆餅的頭會因熱力不同而不平均的
