Oatmeal Raisin Cookies 燕麥葡萄曲奇
This is one of my favourite cookies now, Mr P and I just totally love it! I baked 2 times in one week, that is a bit too much, but is how I show you how lovely these cookies are. Normally I don’t like oatmeal or porridge, it is just too “healthy” for me. I baked these cookies just for Mr P at first, but it smell soooo good and I taste one, then I can’t stop.
This is very simple, easy to make, fuss recipe. You don’t have to chill the dough, or cut or pipe the shape (piping is not the thing I like to do) What you need is mix everything and spoom the dough on baking sheet, bake for 15 minutes. Oh just so crunchy but chewy, so delicious!
You can also add some dried cranberries, walnut, almond. But for me, just the raisin is the best! Great treat for afternoon snack, picnic, party, it must be the popular treat!
我不太喜歡燕麥片,感覺太健康。做這個曲奇只是Mr P想吃,但焗後的曲奇超香,我試了一塊後,便愛上了!酥脆但又煙韌有口感,超美味!
這個配方用較少牛油,也可加紅莓乾,果仁等,但我就覺得葡萄已很足夠。超容易做,將所有材料混合,不用放入雪櫃,不用擠花,超方便。做下午茶點,派對小食,旅行野餐都必定大受歡迎!
Mix the flour, raisins and baking powder together. In another bowl, beat the butter until creamy and fluffy, then add sugar and mix well. Add one egg and the dry ingredients to make a cookie dough.
Use ice-cream scoop or two spoons, place the dough on baking tray cover with baking sheet, spacing apart as the dough will spread later. Bake in preheated oven at 180C for 12 to 15 minutes.
將麵粉,葡萄乾及泡打粉拌勻。在另一碗內,用電動打蛋器打發牛油至軟身,加入牛油再打至均勻。下一隻蛋拌勻,再加入麵粉等拌勻。
用兩隻匙羹將麵團放在鋪有烘焙紙的烤盤上,每個要隔少許空間,因會發大的。放入已預熱180度焗爐,焗12至15分鐘即成!
- 70 gram oatmeal
- 60 gram raisins
- 65 gram all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 35 gram unsalted butter
- 40 gram brown sugar
- 20 gram white sugar
- 1 egg
- 材料:
- 燕麥片 -70克
- 葡萄乾 -60克
- 中筋麵粉 -65克
- 梳打粉 -1/4茶匙
- 鹽 -1/4茶匙
- 無鹽牛油 -35克
- 紅糖 -40克
- 白砂糖 -20克
- 雞蛋 -1隻
- Preheat oven to 180C. Mix the flour, raisins and baking powder together.
- In another bowl, beat the butter until creamy then add in brown and white sugar to mix well.
- Add one egg and dry ingredients to mix well.
- Use two spoons to place the dough on baking sheet cover with parchment paper.
- Pop in oven for 12 to 15 minutes.
