Lemon Drizzle Cake 檸檬糖霜蛋糕

This has to be my all time favourite cake!!!! Every time in cafe, I must choose this lemon cake. Tangy, rich and super delicious! I made this cake for some friends and they all love it.

You can easily change the lemon zest and juice into orange, then you have orange drizzle cake. Mine is not really ”drizzle” but a whole lot of icing on, well, why not?! Hope you all love this recipe, enjoy!

這個是我其中最最最喜歡的蛋糕 – 檸檬糖霜蛋糕Lemon Drizzle Cake,充滿檸檬香的磅蛋糕,酸甜開胃。再在上面淋上檸檬糖霜,美麗又好味,難以抗拒!

可以將檸檬皮屑和檸檬汁用橙代替,就成為好味的香橙蛋糕。配一杯熱茶享用,比五星級酒店更好的享受。
做法簡單,新手也可做到,必定要試試!

Cream the butter and sugar until light and fluffy. Add in Egg, mix well.

Sift in flour, baking powder, lemon zest and salt, mix until well-combined.

Add in lemon juice and milk, mix well. Pour the batter into lined baking tin, pop in preheated oven at 180C, bake for 45 to 50 minutes or until the cake is fully cooked. Let it cool completely on wire rack.

For the icing, sift icing sugar and mix with one tablespoon of lemon juice or water. Gradually add more liquid to make it as a slightly thicken paste. Pour the icing on completely cooled cake, let it set for 30 minutes. (If the cake is still warm, the icing will melt)

用電動打蛋器打牛油至軟身,然後加入糖拌勻.

下雞蛋,拌勻,再篩入麵粉、泡打粉、檸檬皮屑及鹽,拌勻.

最後下檸檬汁及牛奶拌勻,將蛋糕糊倒入烤模內 (烤模內先塗奶油或鋪上烘焙紙),放入已預熱180度C焗爐,焗約45-50分鐘,或至蛋糕全熟,將蛋糕放在涼架上待涼.

糖霜裝飾做法: 將糖霜或糖粉過篩,然後下一湯匙的檸檬汁或水拌勻,然後再逐少加少許水拌勻成如圖的糊狀。將糖霜淋在完全待涼的蛋糕上,再待約30分鐘讓糖霜凝固即成!(如蛋糕沒完全待涼便下糖霜,糖霜便會很快溶化的)

  • 130 g unsalted butter
  • 210 g sugar
  • 2 eggs
  • 240 g plain flour
  • 7 g baking powder
  • 1/8 tsp salt
  • 1 tbsp lemon zest
