Classic Walnut Pound Cake 合桃蛋糕
One of the traditional Hong Kong mini cake that you can find in Hong Kong bakery – Walnut Pound Cake. I think this is the most original cake among the classic mini cakes. And it is always left it till the last to finish it. But this rich, buttery cake with crispy walnut pound cake does capture my heart.
Pound cake is very easy to make, all the ingredients is a ”pound”, so it cannot go wrong. But you can adjust the sugar amount to be less sweet, and I use cake flour instead of plain flour. Pound cake is always taste better the next 2 days after you bake it. Which let the flavour and texture to develop. But how can I resist to wait one day to eat it????!!!!
港式西餅中,最不平凡的可說是這個合桃蛋糕,沒有花款,只有平實的牛油磅蛋糕,加了合桃。但香濃的牛油味,加了香脆的合桃,卻是深得我的喜愛。
磅蛋糕,顧名思義就是所有材料的份量都是一磅Pound,沒多沒少,非常容易記的食譜。但我就減少了糖份,改用了低筋麵粉,令蛋糕更鬆軟。所有磅蛋糕都是第二、三天吃味道更好,有更多時間令味道和質感形成。
In a large mixing bowl, cream the butter and sugar until pale colour and very fluffy. Then add in eggs and mix well.
Sift in flour and baking powder, gently mix it until well combine. Do not over mix it. Then add in milk and mix well.
Finally add in chopped walnuts and mix well.
Pour the batter into lined loaf tin (mine is 9inch x 4inch) , then top with more walnuts if you desire.
Pop in preheated oven at 180C, bake for 45 – 55mins or until the cake is fully cooked.
用電動打蛋器打粉牛油和糖至淡黃色
然後加入雞蛋,拌勻。篩入麵粉和泡打粉,拌勻
加入牛奶,拌勻,然後下桃核碎,拌勻
將蛋糕糊倒入鋪有烘焙紙的焗盤內 (我用的是23cm x 10cm),放入已預熱180C焗爐,焗約45-55分鐘或至全熟即成!
- 180 g Salted Butter 有鹽牛油
- 160 g Sugar 糖
- 3 Eggs 雞蛋
- 160 g Cake flour 低筋麵粉
- 1 tsp Baking Powder 泡打粉
- 30 ml Milk 牛奶
- 80-100 g Chopped Walnuts 合桃
