Hong Kong-Style Curry Fish Balls 港式咖哩魚蛋

I am not being dramatic or exaggerate but this is by far the BEST Hong Kong-style curry fish ball recipe!!!!!! For me at least! 😛

This is one of the things I missed most in Hong Kong — The FOOD!!! The street food that you hardly can find in the UK, or not authentic as it is. I always make it at home, I know it is not as good but it does taste of home. So I make it to enjoy it and imagine I am in Hong Kong! Having fish balls on the street brought me so much childhood memories which I always cherish.

This curry fish balls recipe tastes like the one I had in Hong Kong, of course, it might not taste the same as your memories because we properly go to the different stall! But anyway, try and hope you enjoy it as much as I do!

港式街頭小食 – 咖哩魚蛋,終於做到我在香港吃時的味道!能夠在英國家做到港式味道,算是能解一點點思鄉愁

這個咖哩汁味道香濃,不辣的,我最喜歡將醬汁淋在炒麵上,超好味!當然人人去的魚蛋檔不同,這未必是你回憶的味道,但我大力推介,必定要試試!

Soak pork crackling in water until soft. Put in pot of boiling water, cook for 1-2 minutes, drain well.

Cook the fish balls in boiling water, drain well.

In a hot pan, add oil and cook the garlic and shallot, then add in all seasoning. Cook for 2 minutes.

Then add in hot water, bring it to boil then add in fish balls. Cook for 5 minutes. Then add in pork crackling, cook until soften.

Taste it and add more seasonings if needed. Then add in slurry to thicken the sauce. Enjoy!

將豬皮浸軟,用水清洗。放入沸水內,用中火煮一至兩分鐘,瀝乾水備用。

將魚蛋放入沸水內煮一煮,備用。

先用油炒一炒蒜頭和紅蔥頭,然後下所有調味醬料,炒兩分鐘。

然後下熱水,煮沸後再加入魚蛋,煮約5分鐘。再加入豬皮,煮至軟身。

最後試味,不夠味再加點蠔油。再加入粟粉+水(打芡)至醬汁濃稠即成!

  • 400 g Fish Balls 魚蛋
  • 100 g Pork Crackling 豬皮
  • 2 cloves Garlic 蒜蓉
  • 1 Shallot 紅蔥頭
Seasonings
  • 2 tbsp Char Siu Sauce 叉燒醬
  • 1 tbsp Chu Hou Paste 柱侯醬
  • 1 tsp Chicken Powder 雞粉
  • 1 tsp Sugar 糖
  • 1/2 tsp Salt 鹽
  • 1 tbsp Curry Powder 咖哩粉
  • 1 tsp Grounded Turmeric 黃薑粉
  • 1 tbsp Soy Sauce 生抽
  • 1-2 tbsp Oyster Sauce 蠔油
