French Quiche (Bacon & Leek) 簡易法式鹹派
Spring is here, time to start and get some baking done! I love making pies, chocolate pie, lemon pie, apple pie…but savour quiche is also very easy to make. You have to make your own pie crust, they are so much better than the store bought one.
Quiche is very simple but delicious food. It is easy to make it by yourself and I guaranteed it taste so much better than the restaurants one. You can add any filling you like, I always love bacon! (Who doesn’t ! ) with some vegetable like spinach, leek etc. Of course add lot of cheese, and it is just delicious! Perfect for simple meal and serve with salad.
法式鹹派Quiche是法國的經典,先做好批皮,然後加入雞蛋與忌廉拌勻,加上芝士和各種不同的餡料,超好味!
我喜歡用煙像和韭蔥,也可加入自己喜歡的材料:雞肉、洋蔥、磨菇、菠菜等。溶化的芝士,金黃酥脆,超好味!做正餐配沙律享用,這是我最受歡迎的宴客料理呢!

For the filling: add some oil in hot pan, cook the cubed bacon for 3 minutes. Add in leek, season with salt and pepper. Cook until leek is softened, set aside.
Add the filling into pie shell, add in cheese.
In a bowl, mix eggs and cream together, season with 1 tsp of salt and 1/4 tsp black pepper. Pour the mixture into the pie shell and sprinkle more cheese on top.
Pop in preheated oven at 160C, bake for 35-40 minutes or until the top is set and golden.
*I use 9-inch pie tin
餡料做法:燒熱鑊後下少許油,炒煙肉粒約3分鐘. 然後下已切碎的韭蔥,下黑胡椒粉調味,煮至韭蔥軟身,待涼.
將餡料放入批皮內,灑上芝士碎.
在另一大碗內,將雞蛋及淡忌廉拌勻,下一茶匙鹽及1/4茶匙黑胡椒粉拌勻。然後將雞蛋混合液倒入批皮內,再灑上更多芝士碎。
放入已預熱160度C焗爐,焗約35-40分鐘,至表面凝固及金黃色即成!
*我用9吋 (24cm)的派盤,是6-8人份的
- 1 portion pie crust
- 150 g bacon
- 2 leek
- 3 eggs
- 200 ml cream
- 100 ml milk
- 80 g cheddar cheese
