French Onion Soup 法式洋蔥湯

Very classic French onion soup, it sounds fancy in restaurants but it is very easy to make at home. After cooking, the onion are actually very sweet, with the bread and cheese…mmm..it is really one of the best comfort food in winter.

The most critical part, of course is to cook the onion, it might takes tons of patience but trust me, everything is worth it at the end. Perfect for winter night dinner or wow your guest! Enjoy!

冬天到,最好就是喝一碗熱騰騰的湯。這個法式洋蔥湯在西餐廳經常會有,香甜的洋蔥,再加加有芝士和多士,超好味!

做法簡單,煮一大煲全家享用,超滿足!

Thinly slice the onion. Add olive oil and butter  in a pot, cook until butter melted. Add in onion, cover the lid and cook for 10 minutes. Add in two teaspoons salt and one teaspoon sugar  continue to cook for 20-30 minutes, until caramelised. 

Add two teaspoons flour, cook for a minute. Add in apple cider vinegar and beef stock, bring it to boil and simmer for 20 minutes.

Pour the soup in a bowl, put a slice of toasted baguette on top.

Sprinkle cheese then bake in preheated oven at 200C (top shelf), until cheese are melted.

 

將洋蔥切幼絲,燒熱煲後下橄欖油和牛油,煮至牛油溶化後,下洋蔥,蓋上煲蓋,煮洋蔥10分鐘。然後下兩茶匙鹽和一茶匙糖,繼續煮洋蔥約20-30分鐘,至有焦糖色

下兩茶匙麵粉,再炒一分鐘,然後下蘋果醋和牛高湯,煮沸後轉小火煮20分鐘

將洋蔥湯倒入碗內,放上法包多士(將法包放入多士爐或用平底鑊烘)

再灑上芝士碎,放入已預熱200度焗爐(放在最上層),焗至芝士溶化即成!

*可用蔬菜或雞湯代替牛高湯
*可用白酒代替蘋果醋Apple Cider Vinegar,也可省略
*法式洋蔥湯是用Gruyère 芝士,也可以用其他芝士代替

  • 1 kg onion
  • 120 ml apple cider vinegar
  • 1.3 lt beef stock
  • French baguette
  • Gruyère Cheese
