French Madeleines 瑪德蓮蛋糕
Classic delicate little French cakes – Madeleines, has a distinctive shape. Very buttery, moist little tea cakes, perfect for afternoon tea!
Oh how adorable are these little sponge cakes! A beautiful shell-like shape with little dome on top. I always love to make these cakes to my friends, put in little bags as gift, it is just beautiful!
It is super easy to make to make, no mixer required. It only takes 30 minutes to make and you will have lovely , fancy French petite madeleines.
貝殼外形的經典法式牛油小蛋糕Madeleine,超可愛呀!充滿香濃的牛油香,鬆軟美味,加點檸檬汁,清新不膩。也可加入紅莓,藍莓等。
配一杯熱茶,就成高貴的下午茶!做法超簡單,不用機器,將材料拌勻便可,新手不敗的必試蛋糕!
Mix the eggs, salt and sugar together, then add in lemon zest and lemon juice. Sift in flour and baking powder, gently mix together until well combined, do not overmix it.
先將蛋,鹽及糖拌勻,然後加檸檬汁,檸檬皮拌勻(下檸檬皮及檸檬汁是令蛋糕更香,可省略)
Then pour in melted butter, mix well. If you want to make chocolate flavour, you can add about 15 – 20 gram coca powder into the batter.
最後加入溶化牛油徹底拌勻(奶油溶化後要待涼才用)。如做巧克力味,可加可可粉(約15- 20克)與蛋糕糊拌勻。
Lightly brush melted butter into madeleine pan, then pour the batter in. Pop in preheated 180c oven, bake for about 10 -12 minutes. Done!
在瑪德蓮模具內塗一層溶化牛油,倒入蛋糕糊,放入已預熱180度焗爐,焗約10-12分鐘即可!

- 130 sugar
- 1/4 salt
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 130 gram plain flour
- 1/2 teaspoon baking powder
- 110 gram unsalted butter, melted
- 材料:
- 雞蛋- 3隻
- 糖- 130克
- 鹽- 1/4茶匙
- 檸檬皮(可省略)- 1茶匙
- 檸檬汁(可省略)- 1湯匙
- 中筋麵粉- 130克
- 泡打粉- 1/2匙
- 溶化無鹽牛油- 110克
