French Lemon Madeleines 法式檸檬貝殻蛋糕
Lovely little french madeleines cake with lemon flavour. Buttery, moist and delicious shell-like shape cake. Perfect for afternoon tea, bake sale and gifts.
Every time I travelled to France, I always love to buy these little buttery cake. They are so rich and so delicious! They are so easy to make and no need any electronic mixer.
貝殼外形的經典法式牛油小蛋糕Madeleine,超可愛呀!香濃的牛油香,鬆軟美味,加點檸檬汁,清新不膩。
配一杯熱茶,就成高貴的下午茶!做法超簡單,不用機器,將材料拌勻便可,新手不敗的必試蛋糕!
Mix the eggs, salt and sugar together, then add in lemon zest and lemon juice. Sift in flour and baking powder, gently mix together until well combined, do not overmix it.
Then pour in melted butter, mix well.
Lightly brush melted butter into madeleine pan, then pour the batter in. Pop in preheated 180c oven, bake for about 10 -12 minutes. Done!
先將蛋,鹽及糖拌勻,然後加檸檬汁和檸檬皮拌勻。下中筋麵粉及泡打粉,輕力拌勻,不要加入太多空氣。
最後加入溶化牛油徹底拌勻(牛油溶化後要待涼才用)
在瑪德蓮模具內塗一層溶化牛油,倒入蛋糕糊,放入已預熱180度C 的焗爐,焗約10-12分鐘即可。

- 110 gram sugar
- 1/4 teaspoon salt
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 130 gram plain flour
- 1/2 teaspoon baking powder
- 110 gram melted unsalted butter

- 溶化無鹽牛油 110克
