Falafel 中東炸鷹嘴豆餅
Falafel, a super popular snack in Middle East. When we live in Dubai, we always have falafel. They are made of chickpea, or sometimes with fava beans. I love to eat is just as it is, or put in pita bread pocket , add some salad and tahini (sesame seed paste) . Perfect sandwiches!
They are very easy to make, with few ingredients. You must use raw chickpeas, not from the thin, cause they are too soft and can’t be shaped. Very easy to make and super delicious! You don’t have to go to Middle East to taste these goodies! Enjoy!
這個中東炸鷹嘴豆餅是中東傳統,又非常受歡迎的小食。我在杜拜生活時,超級喜歡吃這個。非常香脆可口,用鷹嘴豆做,營養豐富。當地人會將鷹嘴豆餅放入Pitta bread 內,再加些沙律和Tahini 芝麻醬汁,就成豐富又美味的三文治。
做法非常簡單,但一定不可以用罐頭的鷹嘴豆,因為已煮熟,太軟身,不能做形,會散開的。非常好味,不用到中東都吃到這個中東美食!
Soak the chickpeas for 12 hours, then drain well. Put all the ingredients, salt and pepper into a food processor, blend it well. Chill the mixture in the fridge for 30 minutes.
Take out a small portion then roll into ball. Fry in hot oil for about 2 minutes. Enjoy!
*This recipe can make about 24 falafels. Do not use tinned chickpea, cause it cooks and it is hard to shape
將鷹嘴豆浸12個小時,然後瀝乾水份。將所有材料,加入鹽和黑胡椒粉調味,用攪拌器拌勻. 將混合物放入雪櫃30分鐘
拿出一小份混合物,搓圓. 放入熱油鍋內,炸約兩分鐘即成!
*這個食譜可做約24個鷹嘴豆餅
*不要用罐頭的鷹嘴豆,因為已煮熟,不能做形
- 400 g Chickpea
- 1 Onion
- 5 gloves Garlic
- 1 tsp Ground cumin
- 1/2 tsp Baking powder
- 25 g Parsley
