Easy Pumpkin Bread 簡易南瓜蛋糕
Yay, it is pumpkin season! Fall finally is here! Except for Halloween, pumpkin is in season now, different shape and it is good to eat them!
For me, the best thing is to make pumpkin soup, nice and warm for cold nights. And for baking, it is perfect to make pumpkin bread! Have you try the pumpkin bread in starbucks? This one is waaaay better than Starbucks ones, it is very easy to make, full of different spices, the texture is so moist and just delicious!

我最喜歡用南瓜做西式南瓜湯,超好味又有營養!秋冬暖胃之選。但其實用南瓜烘焙也超簡單,這次做了南瓜蛋糕。大家有吃過星巴克的南瓜蛋糕嗎?這個版本當然比街賣的美味,超鬆軟,充滿香料,超好味!
Peel and cut the pumpkin into small pieces, steam it until soften. Then use a fork to mash it until puree like, set aside.
In a large bowl,mix with eggs and pumpkin puree together, then add in sugar, vegetable oil and vanilla extract.
Then add in ground cinnamon, ginger, cloves and mixed spice. Then add in baking powder, baking soda and plain flour. Mix it until well combined.
Pour the batter into lined loaf tin, sprinkle some pumpkin seeds on top. Pop in preheated oven at 180C, bake for 45-55 minutes or until is fully cooked. Enjoy!
將南瓜去皮、切小塊,再蒸至軟身,再用叉壓成蓉,備用
在大碗內,將雞蛋和南瓜蓉拌勻,再加入糖、菜油和雲尼拿香油拌勻
篩入麵粉、泡打粉、梳打粉和所有香料,拌勻
將蛋糕糊倒入鋪有烘焙紙的烤盤內,再在上面加上南瓜籽。放入已預熱180C 焗爐,焗約45-55分鐘或至全熟即成!

- 200 g Sugar 白糖
- 60 g Brown Sugar 紅糖
- 160 ml Vegetable Oil 菜油
- 1 tsp Vanilla Extrat 雲尼拿香油
- 190 g Plain Flour 中筋麵粉
- 1 tsp Baking Powder 泡打粉
- 1 tsp Baking Soda 梳打粉
- 1/2 tsp Ground Ginger 薑粉
- 2 tsp Ground Cinnamon 肉桂粉
- 1/4 tsp Ground Clove 丁子香粉
- 1 tsp Mixed Spice 混合香料
- Pumpkin Seeds 南瓜籽
