Easy Bagels 簡單原味貝果Bagel
Classic, simple, soft and chewy bagels, perfect to start your morning with it. So much better than the one you buy in shops.
Nothing more satisfying when you see the bread dough being proofed and increase the size in double. This is very therapeutic. Even I am not a big fan of bread, I love making it.
This is classic, simple, soft and chewy bagels, to make the bagels chewy is to boil them for about 45 seconds to a minute each size. You can be creative and top the bagel with sesame seeds, poppy seeds etc. Freshly bake bagels are the best for breakfast and lunch!

Activate the dried yeast by mixing yeast, sugar and 3 tablespoons of water, set aside for 10 minutes.
In a large bowl, mix the flour, salt and yeast together. Slowly add in water to form a dough. * You may not need all the water.
Place the dough on floured surface, knead for about 8-10 minutes, or until the surface is smooth. Place in slightly oiled bowl, cover with cling film and let it proof for at least an hour or double in sizes.
Press the dough to release the air, the divide into 8 pieces. Roll into a ball, press it, then use your thumbs to make a hole. Place the dough on baking sheet, cover with towel and let it rest for 30 minutes.
Bring a large pot of water into boil, place 2 bagels at a time and cook it for 45seconds to a minute each side. Dry it with paper towels, and put back on baking sheet. Brush some egg wash on top and sprinkle some toppings on top if you like.
Pop in preheated 200 oven, bake for about 20 minutes.
先將酵母、1湯匙糖及3湯匙水拌勻,靜置10分鐘。在大碗內將麵粉、鹽和酵母拌勻, 並逐少加入水(約300毫升)拌勻成麵糰 (未必需要加入所有水,成麵糰便可,如太濕,加多點麵粉)
在工作枱上灑上麵粉,大力搓麵糰約8至10分鐘,令麵糰表面較滑及有彈性。
在另一碗內塗少許油,放入麵糰,用保鮮紙封口,待麵糰發酵最少一小時,至麵糰漲大一倍。
用手按壓麵糰,用手按壓排出空氣,然後將麵糰分成8份,搓圓,壓扁,在中間弄一個洞,放在灑有麵粉的檯上,用毛巾蓋上,靜置30分鐘。
煮沸一大煲水 (中火),每次下兩個貝果煮45秒,再反到另一邊再煮45秒,撈起,放在毛巾上吸乾水份。
將貝果放在烘焙紙上,塗上蛋液 (也可在上面灑上芝麻),放入已預熱200度焗爐,焗約20分鐘至貝果成金黃色即成!
