Easiest Blueberry Muffins 藍莓鬆餅
Muffins are the best for breakfast, so filling, delicious and induglent in the morning. You can add chocolate chips, blueberries, marmalade, cherris….Again, the homemade freshly baked one is always the best. Try to bake it yourself and you won’t buy the store package one, I promise.
This is the easiest muffin recipe, what you need a big bowl and a spatula to mix all the ingredients together. It takes only 15 minutes to mix everything and 20 minutes to bake. Do not overmix the batter, once it’s combined, then itis good to go.
And the best part is….no BUTTER! Sounds healthier and lighter. I use the vegetable oil instead and make it even softer and moister, definitely not cakey. With the lovely blueberries and lemon in it, it is so fresh, flavourable and light. How can you resist these little treat. Let’s start baking!

Mix the beaten eggs, milk, vanilla extract, oil and lemon juice together. In another bowl, mix the flour, baking powder and sugar together. Then add the liquid into dry mixture, mix until well combined.
Add blueberries and lemon zest, and transfer the batter into lined muffin tins. Sprinkle some brown sugar on top. Bake in preheated oven at 220C for 20 to 25 minutes.
將已打發的雞蛋,牛奶,雲尼拿香油,菜油及檸檬汁拌勻。在另一個碗內,將麵粉,檸檬皮,泡打粉及糖拌勻。將混合液倒入麵粉內,徹底拌勻。再下檸檬皮及藍莓,倒入模具內,灑上紅糖。放入已預熱220度焗爐,焗20至25分鐘。
- 200 gram all-purpose flour
- 90 gram sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs
- 80 ml milk
- 80 ml vegetable oil
- 3 tablespoons lemon juice
- 1 teaspoon lemon zest
- 150 gram blueberries
- Brown sugar for topping

- Preheat the oven to 220C. Mix the beaten eggs, milk, vanilla extrat, lemon juice and oil together.
- In another bowl, mix the flour, lemon zest, sugar and baking powder together.
- Add the wet ingredient into the dry one and mix well.
- Add blueberries and pour the batter into lined muffin tins.
- Pop in oven for 20 to 25 minutes.
