Dried Scallop & Egg White Fried Rice 瑤柱蛋白炒飯
Every time when I back to Hong Kong, I always love to order this dried scallop & egg white fried rice. This fired rice use egg white instead of yolks, feel less heavy.
在香港酒樓每次都喜歡點這道炒飯,用蛋白和瑤柱一起炒,感覺較清新不膩,名貴又好味。在家裡自己炒,材料份量加倍,美味又滿足~
Boil the zucchini for 2 minutes, set aside.
Add oil in hot pan, cook the egg whites, set aside.
Soak the dried scallop until soften, shredded, then steam it until cooked. Add little bit more oil in pan, add in dried scallop and minced ginger.
Add in rice, cook for 2 minutes, then season with salt.
Add in egg white and zucchini, stir well. Done!
將翠玉瓜切成小塊,放入沸水內煮一至兩分鐘,盛起備用。
燒熱鑊後下油,炒蛋白,盛起備用。
將瑤柱浸軟,蒸至軟身,然後撕成幼絲。鑊內下油,下薑未,再炒一炒瑤柱 (可把瑤柱蒸熟)
然後加入白飯,下鹽調味,加入蛋白和翠玉瓜,拌勻即成。
- 2 bowls rice
- 1/2 zucchini
- 3 egg whites
- 2 teaspoon ginger, minced
- few dried scallop
- 材料:
- 白飯 2碗
- 翠玉瓜 半條
- 蛋白 3隻
- 薑蓉 2茶匙
- 瑤柱 數隻
