Yes, is chicken feet!!!! Don’t be scared, but it is the most popular and traditional Dim Sum dish…and is delicious!!! The fried chicken feet marinate with black bean sauce and then steam in bambo steamer.

Mr P loves chicken feet so much, everytime when we go Yum-cha, he MUST order it and enjoy the whole dish by himself. My family and friends always so amazed when see him enjoy chicken feet so much.

After frying the chicken feet, the skin become chewy, soft and gelatinous. The skin aborbed all those delicious spicy black bean sauce, perfect to eat with rice too.

廣東點心其中最受歡迎,每次到茶樓都會點的 -豉汁蒸鳳爪。尤其是Mr P,不知為什麼這麽喜歡吃,每次飲茶都必定要點一籠。每次親戚朋友看到他用非常熟練的筷子技術,夾著鳳爪細嚼時,都會露出驚訝的神情,這個老外很。。。奇怪呢!哈哈!

先將鳳爪用油炸(或到凍肉店買急凍炸鳳爪),用豆豉及豉油等一起醃,然後再蒸便成!自己做更經濟又美味! 在家做一大碟,超簡單,不用到茶樓也可吃到點心囉!

Cut the nail of the chicken feet, dry it and fry in hot oil for 3 minutes. Or you can use the frozen fried chicken feet, is easier.

先將急涷炸鳳爪洗淨,剪去指甲,抹乾水。也可用新鮮鳳爪,抹乾水後放入熱油鍋炸至金黃色,約三分鐘。Chicken Feet with Black Bean Sauce

Then cook the feet in boiling water for about 20 minutes. Dry it and marinate for at least 30 minutes, longer time the better.

Then steam at high heat for  20 to 25 minutes. Serve when is hot.

用一煲沸水煮已炸的鳳爪20分鐘,然後瀝乾水份。將鳳爪與醃料拌勻,醃最少30分鐘,醃愈長時間愈入味。用大火蒸鳳爪約20-25分鐘即成!

Ingredients
  1. 10 chicken feet
For the Marinade
  1. 2 tablespoons oyster sauce
  2. 1 tablespoon soy sauce
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon sugar
  5. 1/2 teaspoon sesame oil
  6. 1 teaspoon garlic, minced
  7. 1 teaspoon black beans
  8. 1 - 2 red chillies
  9. white pepper
  10. 材料:
  11. 急凍炸鳳爪 -10隻
  12. 醃料
  13. 蠔油 -2湯匙
  14. 生抽 -1湯匙
  15. 麻油 -1/2茶匙
  16. 糖 -1/2茶匙
  17. 鹽 -1/2茶匙
  18. 指天椒 -1-2隻
  19. 豆豉 -1茶匙
  20. 蒜蓉 -1茶匙
  21. 白胡椒粉 -少許
