Creamy Corn Soup 粟米忌廉湯
Classic, simple, creamy and comforting corn soup, super easy to make and serve with croutons. Perfect week night dinner in winter.
It is easy to make soup from the tin, but make the soup fron scratch is sooooooo much better. This corn soup is so easy to make, it is best if you can use fresh corn, but tin corn is as good.
In winter, we love to have soup for dinner, with some crouton or bread. Simple, easy, comforting and delicious! Make a large pot, then you can bring it to work for lunch next day. Anyway, it is perfect for anytime!!
天氣稍有涼意,最好是喝一碗簡單的粟米忌廉湯,香甜的粟米,充滿牛油及忌廉,超美味!
加入馬鈴薯有自然勾芡口感,加入忌廉或牛奶,口感幼滑creamy。
Add butter in a hot pot, cook the onion for few minutes until soft. Then add corns and cook for a minute.
可用新鮮或罐頭粟米,將洋蔥及馬鈴薯切丁(愈小愈容易熟)。熱鍋後下牛油,然後下洋蔥拌勻,煮3分鐘,再下粟米拌炒一分鐘。
Add chicken or vegetable stock and potatoes, put the lid on, cook for 20 minutes on medium heat, until the potatoes are cooked.加入馬鈴薯及雞湯(或蔬菜湯),用中火煮沸,蓋上煲蓋再煮20分鐘或至馬鈴薯全熟。用攪拌器將湯打成勻,打的程度可依個人喜歡的口感做調整,喜歡喝綿密一點就打細一些,及過篩。喜歡帶點粟米粒的口感,則只要打勻。
Use a blender to puree the soup, or you can just leave it as it is. Then season the soup with salt and pepper. Add in milk and cream, cook for a minute, it is done!
- 30 gram butter
- 300 gram corns
- 2 medium potatoes, cubed
- 1 onion, chopped
- 800ml chicken or vegetable stock
- 200 ml milk
- 50-80 ml cream
