Classic Victoria Sponge Cake 維多利亞海綿蛋糕

Nothing more classic than this Victoria Sponge cake / Victoria sandwich. It said Queen Victoria have this cake every afternoon, that’s why this cake name after her. British people like jam and cream so much, but it is actually very delicious when sandwich with cake or scone. That make these two British classic.

I always love to make this cake, it is super easy to make, all the ingredients are just the same ratio, recipe already in my head. Even you are new to baking, I am sure you can make this cake too. Sandwich with cream and jam, it is perfect for afternoon tea and wow your guests.

這個是英式傳統的蛋糕,英女王維多利亞在下午茶必會吃,因而命名Victoria Sponge Cake。在蛋糕間夾著草莓醬及忌廉,看似普通,但高貴又好味!

材料非常簡單,都是麵粉、雞蛋、糖,而且份量比例都是相同。做法超簡單,保證新手都做到。我喜歡用兩個蛋糕模焗,這可減低焗的時間,也不用再將蛋糕切半。當然,一個蛋糕模都可以,焗的時間增至45分鐘左右。這個蛋糕做下午茶或宴客都非常合適!

Cream the butter and sugar until pale and fluffy. Add in vanilla extract and eggs, beat until well combined.

Sive in flour and baking powder, mix well but not over mix it.

Pour the batter evenly into two 20cm cake in. Pop in preheated oven at 180C, bake for about 20 minutes or fully cooked. If you use one cake tin, bake for 40-50 minutes or until the cake is fully cooked.

For the filling: beat the cream, then add in sugar. Beat until firm peak.

Let the cake cool completely on wire rack. Then spread strawberry jam on one cake, then the other put on whipped cream.

Sandwich it, dust with icing sugar and enjoy!

先用電動打蛋器打發牛油,然後下糖拌勻.

下雲尼拿香油及雞蛋,拌勻. 篩入麵粉和泡打粉,拌勻.

將兩個20cm的蛋糕模鋪上烘焙紙,將蛋糕糊平均倒入兩個模內。放入180度C焗爐,焗約20分鐘或至蛋糕全熟 (*也可將所有蛋糕糊放入一個蛋糕模內,烤40至50分鐘,蛋糕待涼後將蛋糕切半)

用打蛋器打發淡忌廉,加入糖,打發至抹端堅挺,備用

將蛋糕脫模,放在涼架上待涼。在一蛋糕面上塗上草莓果醬,另一個蛋糕在面上抹上已打發的忌廉。將塗有果醬的蛋糕蓋在上面,灑上糖霜即成!
