Homemade Chinese Dumplings 韮菜豬肉水餃
Classic Chinese dumplings, wrap different kind of filling with wrapper, then boil it or pan-fry it. It is very comforting, delicious and so easy to make at home.
Homemade dumplings are always the best! The filling can have many variations, I like to make minced pork with chives and minced pork with shrimps. For the wrapper, dumpling wrapper is white color, circle and square. Depends which one you like.
Once you make the filling, you can wrap a lot dumplings, store some in freezer. Whenever you wanna eat, just defrost it before you cook. Then you will have quick lunch or dinner.
自家製的水餃是最好的,材料新鮮,餡料又夠多,煮一大鍋,大滿足!我喜歡做兩款口味,豬肉加韭菜,及豬肉配蝦,營養豐富,簡單又美味!當然也可加入自己喜歡的餡料,水餃皮是白色的,有圓形和方形。可多包一點水餃,將水餃存放在冰箱,享用前先解凍,非常方便!
For the minced pork and chives filling, mix the meat with seasoning, marinate for 15 minutes. Wash the chives, dry it and finely chop it. Add in the meat mixture, add one egg and mix well.
將豬肉與調味料拌勻,醃15分鐘。洗淨韮菜,瀝乾水份,切碎,再加入豬肉與雞蛋拌勻。
For the square wrapper, place the filling in the middle, then use finger to dip some water around the edges. Fold and seal it, the sealing side face down. Dip some water on top left corner, then fold it backward and stick the left and right top corner together.
方形皮包法:將餡料放在水餃皮中間,用手指沾些水,塗在皮周邊。然後對摺,封口向下。在左上角沾些水,將兩邊向後反,將左右上角黏在一起。
For the round wrapper, place the filling in the middle, dip some water around the edge. Fold and seal it, then dip some water at the end, put both side of the end together.
圓形餃子皮包法:將餡料放在餃子皮中間,用手指沾些水圍邊,對摺,封口。將頭尾兩邊疊在一起,用水封口。
Bring a large pot of water to boil, add some chicken stock powder and dumplings. Once the water boil again, add one bowl of tap water to a pot. Bring it to bowl, then add the second bowl of water to the pot. Repeat this 2 times (total add 3 bowls of water to a pot)
Wait the final time, the water is boil, let it cook for further one minute, then the dumplings will be cooked.
煮沸一煲水,下少許雞粉,再下水餃,煮至水滾時,加一碗開水入煲內,又再煮沸,又再加一碗水,總共加三碗水。最後再多煮一分鐘,那水餃便熟。
- 400 gram minced pork
- 40p gram chives
- 900 gram wrappers
- 1 tablespoon light soy sauce
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/2 teaspoon sesame oil
- 1 egg
- 4 teaspoons corn starch
- White pepper, to taste
- 韮菜豬肉水餃材料:
- 免治豬肉 -400克
- 韮菜 -400克
- 水餃皮 -400克
- 豬肉鮮蝦水餃材料:
- 免治豬肉 -400克
- 鮮蝦 -300克
- 水餃皮 -900克
- 調味料:
- 生抽 -2湯匙
- 糖 -2茶匙
- 鹽 -1茶匙
- 麻油 -1/2 茶匙
- 雞蛋 -1隻
- 粟粉 -4茶匙
- 白胡椒粉 -少許
- Mix the meat with seasoning, marinate for 15 minutes.

- Fold and seal it, the sealing side face down.
- Dip some water on top left corner, then fold it backward and stick the left and right top corner together.
- Bring a large pot of water to boil, add some chicken stock powder and add dumplings.
- Once the water boil again, add one bowl of tap water in the pot. Bring it to boil.
- Once it boils, then add one more bowl of water in. Repeat this for 2 times (total add 3 bowls of water in the pot)
- After the last time, let the dumplings cook for one more minute, then dumplings will be cooked.
