Welsh Cakes 威爾斯小蛋糕
Little traditional cakes originally from Wales. Last week of St.David’s day, finally I tried my first Welsh Cake. They taste like cake, but also bit like biscuits, maybe taste a bit like scone. It is very delicious with sugar on top.
Super simple ingredients, very easy to make and you can make it on stove top, no oven needed! Perfect little cake with a cup of tea!
Red Velvet Cupcake 紅絲絨杯子蛋糕
Usually I don’t really like to eat cupcakes, I mean they look really pretty but the giant dome of buttercream put me off a little. The only cupcake I like is red velvet cupcake with cream cheese frosting. Very airy and moist cake with not too sweet cream cheese frosting on top, perfect treat!
Blueberry Crumb Cake 藍莓金寶蛋糕
For me, winter is for crumble, but if you want to have cake as well, this crumb cake is definitely perfect for you.
Very soft and light cake with blueberries or any fruit you like. Then add crumble on top of the cake. The golden crispy crumble with delicious cake, this is the cream. Serve with ice-cream or custard, perfect winter dessert.
Cheese Muffin 芝士鬆餅
I have so many muffin recipe already but they are all SWEET! It is time to make a savour one with my favourite cheddar cheese, bacon, bell pepper and tomato….so it is just turning a breakfast into a muffin 😉
Freeze the leftover muffins and reheat in the oven next day. Super easy, simple , healthy breakfast or snack! Enjoy!
Apricot Jam Mini Cake 黃梅花籃 (黃梅果醬小蛋糕)
Who like the classic Hong Kong bakery’s mini cake 西餅?When I was kid, I always love those mini cakes with different shape, very colourful and delicious. This apricot jam mini cake is my favourite, I love to lick the jam first then eat the cake haha.
The original cake use sponge cake with whipped cream, but I prefer and use butter cream instead. You can definitely use whipped cream and different favour of jam. Simple but delicious cake, try and hope you enjoy it!
Salted Caramel Cheesecake 海鹽焦糖芝士蛋糕
Hi caramel lovers! Yes caramel snack recipe again! Who doesn’t love caramel right? This time I make the mini version caramel cheesecake with caramel topping of course.
Homemade caramel sauce is so easy to make, you can add it in popcorn, ice-cream, cake…anything really. This cheesecake is caramel flavour, very rich and indulgent. Hope you love it!
Orange & Cranberry Muffins 香橙紅莓鬆餅
While summer is here, I always feel like something light. Not a creamy cake full of icing but refreshing light and moist muffins.
This muffin recipe use vegetable oil instead of butter, it makes it taste lighter and slightly healthier. Add some orange zest and orange juice, with some dried or fresh cranberry. Very refreshing and delicious. Super easy to make, no mixer needed. Try and hope you like it!
Classic Victoria Sponge Cake 維多利亞海綿蛋糕
Nothing more classic than this Victoria Sponge cake / Victoria sandwich. It said Queen Victoria have this cake every afternoon, that’s why this cake name after her. British people like jam and cream so much, but it is actually very delicious when sandwich with cake or scone. That make these two British classic.
I always love to make this cake, it is super easy to make, all the ingredients are just the same ratio, recipe already in my head. Even you are new to baking, I am sure you can make this cake too. Sandwich with cream and jam, it is perfect for afternoon tea and wow your guests.
Coconut Mochi Cake 椰汁麻糬小蛋糕
So lately many people obsessed with mochi, like Japanese mochi filled with red bean paste and strawberry, the Hong Kong style mochi filled with mango, peanut or red bean paste. They are so chewy and super delicious!
Actually mochi is very easy to make, you can buy the glutinous rice flour in grocery shop and you can have the mochi snack you crave for. This time, I make the coconut mochi cake originally from Hawaii. With the coconut flavour, sooooo chewy and delicious. I made it with mini muffin tin, that make it bite size, or you can make in cake sheet pan, then cut into small pieces. Try and hope you love it too!
Lemon Drizzle Cake 檸檬糖霜蛋糕
This has to be my all time favourite cake!!!! Every time in cafe, I must choose this lemon cake. Tangy, rich and super delicious! I made this cake for some friends and they all love it.
You can easily change the lemon zest and juice into orange, then you have orange drizzle cake. Mine is not really ”drizzle” but a whole lot of icing on, well, why not?! Hope you all love this recipe, enjoy!
