Cantonese Steamed Sponge Cake 馬拉糕

One of my favourite dim sum – Cantonese steamed sponge cake, ok, I have so many favourite dim sum. We always order sponge cake when in Chinese restaurant, usually they cut it into big square, then you just share. Of course, it never enough.

This steamed sponge cake is airy, moist and delicious. Make with brown sugar that make it taste richer. I tried so many recipes and this one is the best so far. Very easy to make and hope you love it too!

這個是我最喜歡的港式點心之一 – 馬拉糕,每次飲茶都必定要點這個。香濃的蛋香,蛋糕鬆軟,簡單又好味!

試做了很多次,終於做到一個滿意的。做法簡單,做早餐或下午茶點就最讚!

Beat the egg and sugar for about 5 minutes, or until ribbon stage. 

Sift in flour, custard powder, baking soda and baking powder. Then fold it gently.

Add milk and vegetable oil, mix well. Then pour the batter into lined steamer /or any baking dish, steam for about 30 minutes or until fully cooked. Enjoy!

* I use 8-inch steamer

 

用電動打蛋器打發雞蛋和糖,打發至麵糊可畫出8字。

再篩入麵粉、吉士粉、泡打粉和梳打粉,用膠刮輕力拌勻。

再加入牛奶和蔬菜油,拌勻,再將蛋糕糊倒入鋪有烘焙紙的蒸籠內,用中火蒸約30分鐘即成!

*如沒有蒸籠也可以用普通蛋糕模或較深的盤
*我用的是8吋蒸籠

  • 3 eggs
  • 70 g brown sugar
  • 30 g castor sugar
  • 110 g plain flour
  • 30 g custard powder
  • 6 g baking powder
  • 2 g baking soda
  • 30 ml milk
  • 75 ml vegetable oil

  • 2 梳打粉
  • 30 毫升 牛奶
  • 75 毫升 蔬菜油
