Blueberry Yogurt Muffins 藍莓乳酪鬆餅
I have been share a lot of muffins recipes with you guys, strawberry, blueberry, coffee…These blueberry yogurt muffins are slightly different and so far, I think they are the best among all!!! Mr P keep asking me to make more, they are so moist, soft and the sweetest come from the blueberries…so yummy and healthy.
This recipe use vegetable oil instead of butter, which make it lighter and less fat. Add in yogurt is the key for this recipe, which make the muffins extra soft and moist. So easy to make with a handful of ingredients. Literally, just mix everything together and it is done! Try and enjoy it!

之前已跟大家分享過很多鬆餅Muffin 食譜,全部都超易做又好味,好多朋友試做後都大讚!但這個藍莓乳酪鬆餅我覺得是最好味的!
這個鬆餅不用牛油,加了乳酪令鬆餅更濕潤鬆軟。做法超簡單,絕對是新手不敗的配方。做早餐、下午茶、野餐小食也十分讚,快試試!
Mix egg, vegetable oil, lemon juice and milk together, then add in sugar, mix well.
Add in yogurt, then sift in flour, salt and baking powder. Mix until well-combined. *Do not over mix, just until smooth is ok)
Add in blueberries, mix well. Pour the batter into lined muffin tin, you can add some more blueberries on top and sprinkle with brown sugar. Pop in preheated oven at 180C, bake for about 25 minutes or until fully cooked. Enjoy!
將雞蛋、油、檸檬汁和牛奶拌勻,再下糖,拌勻.
加入乳酪拌勻,然後篩入麵粉、鹽和泡打粉,拌勻(*不要過份拌勻,沒有粉粒即可)
加入藍莓,拌勻後倒入模具內,可在上點再加點藍莓和紅糖,放入已預熱180度C焗爐,焗約25分鐘或至全熟即成!

- 5 g baking powder
- 1/4 tsp salt
- 130 g blueberries
- 1 隻 雞蛋
- 120 毫升 菜油
- 80 毫升 牛奶
- 30 毫升 檸檬汁
- 120 克 糖
- 100 克 乳酪
- 150 克 中筋麵粉
- 5 克 泡打粉
- 1/4 茶匙 鹽
- 130 克 藍莓
