Blueberry Crumb Cake 藍莓金寶蛋糕

For me, winter is for crumble, but if you want to have cake as well, this crumb cake is definitely perfect for you.

Very soft and light cake with blueberries or any fruit you like. Then add crumble on top of the cake. The golden crispy crumble with delicious cake, this is the cream. Serve with ice-cream or custard, perfect winter dessert.

這個鬆軟的藍莓蛋糕,不用加牛油,用菜油代替,不膩又鬆軟。再在蛋糕上鋪有金黃香脆的奶酥,超美味!


可加上卡士達醬或冰淇淋享用,超讚的甜點。超簡單易做,下午茶點之選!

For the crumble, mix all the ingredients together, then set aside.

For the cake, beat the egg and sugar for about 3 minutes until fluffy and pale. Then add in milk, vegetable oil, mix well.

Sift in flour and baking powder, mix until well combined.

Mix blueberries with one tablespoon of flour. Add the blueberries into the batter, mix well. Pour the batter in lined baking tray, then add the crumble on top.

Pop in preheated oven at 180C, bake for about 50-55 minutes or until fully cooked. Enjoy!

金寶做法:將所有金寶材料拌勻成顆粒,備用.

蛋糕做法:將雞蛋和糖用電動打蛋器打發三分鐘至濃稠. 加入牛奶和沙拉油,拌勻,再篩入麵粉和泡打粉,拌勻

將藍莓和一湯匙麵粉拌勻. 將藍莓加入麵糊內,拌勻。倒入鋪有烘焙紙的焗盤內.

再在上面灑上金寶,放入已預熱180度C,焗約50至55分鐘,或至蛋糕全熟即成!

  • 40 g melted butter
  • 80 g sugar
  • 60 g all-purpose flour
