Baked Cheesy Eggplants 芝士焗茄子
I always wonder how can you make eggplants tasty…I mean eggplants are tasty but if you use it to cook Chinese dishes, you might need a lot of oil to keep its colour. Or I like to grill eggplants for salad.
This baked eggplant dish is soooooo delicious, maybe because of the cheese? 😉 With tomatoes and zucchini, it is so healthy, super easy to make. Perfect for appetiser or even main dish. Hope you like it too!
茄子營養豐富,除了用來煮中式料理外,這個焗茄子也非常美味!不用下油,全蔬菜類,再在上面加上芝士碎,焗至溶化,超好味!
做法簡單,做前菜或主菜也不錯!
*可用新鮮或罐頭蕃茄
Wash the eggplants, cut it into half. Spoon the meat out from the eggplants, but don’t make it too deep.
Cut the eggplants into small pieces, then add in a pan with chopped zucchini and tomatoes. Cook under medium heat for 10 minutes.
Put the cooked vegetables into eggplants bowl, sprinkle with grated cheese. Pop in preheated oven at 200C, bake for about 20 minutes. Enjoy!
將茄子洗淨、切半,再將茄子肉挖出來(*不要挖太深)
將挖出來的茄子肉切小塊,放入鑊內,加入翠玉瓜和蕃茄,用中火煮約10分鐘.
將蔬菜放入茄子內,再在上面灑上芝士碎,放入已預熱200度C焗爐,焗約20分鐘即成!

- 1 tin chopped tomato
- parmesan & mozzarella cheese
- 2 隻 茄子
- 1 隻 翠玉瓜
- 1 罐 蕃茄粒
- 芝士碎
