圓肉杞子桂花糕 Osmanthus Goji Berry Jelly
Typical dim sum dessert that you can find when you go Yum Cha. A jelly with osmanthus and goji berry. It tastes very refreshing and delicious.
I used to make it with agar-agar, but this time I make it with gelatine, and the texture is vey good good. And I add some dried longan in it, it definitely sounds and taste healthier 😀
圓肉杞子桂花糕 – 每次飲茶都會食到的中式甜品。芬芳的桂花香,再加了杞子和圓肉,更有口感,感覺更健康!
之前我會用大菜做,今次用魚膠粉,非常爽口,清新好味!
Mix 50ml water with gelatine, let it set for 10 minutes. Then put in a large bowl to dissolve it.
Soak the goji berries, dried longans, and osmanthus flowers in hot water for 10 minutes, then drain and set aside. Cut the dried longans into small pieces.
Put rock sugar into boiling water and cook until dissolved. Then add the osmanthus flowers and cook for two minutes.
Add the fish gelatin solution and mix well. Then add the dried longans and wolfberries, and mix thoroughly.
Pour the mixture into a container and let it cool. Place it in the refrigerator until it reaches a semi-solid state.
Stir the semi-solid mixture again, then return it to the refrigerator until fully set.
將水(材料中的50毫升)加入吉利丁粉內,拌勻,靜置10分鐘. 然後再放入一碗熱水內座溶
用熱水浸杞子、桂圓和桂花,浸10分鐘,然後瀝乾備用,將桂圓剪成小塊。
將冰糖放入沸水內,煮至糖溶化。然後加入桂花煮兩分鐘。
加入魚膠粉溶液,拌勻,再加入桂圓和杞子,拌勻
將液體倒入容器內,待涼後放入雪櫃,雪至半凝固狀態
然後再將半凝固溶液搞拌,再放入雪櫃至凝固即成!
- 2 g Dried Osmanthus 桂花
- 15 g Goji Berries 杞子
- 10 g Dried Longan 桂圓
- 900 ml Water 水
- 130 g Rock Sugar 冰糖
- 42 g Gelatine 魚膠粉
