Korean Cold Eggplant Side Dish 韓式涼拌茄子

Very traditional, simple, spicy, delicious Korean side dish – Gaji-namul, steamed eggplants with garlic, spring onion, soy sauce. Simple but very appetizing.

These side dish you can find in Korean restaurants, along with many different kind of side dish like kimchi, potato, bean sprouts…. they are all so delicious and appetizing. Simply steam the eggplants, then mix with soy sauce and other simple ingredients. 

You can eat with as side dish, salad or main. I always make a little bit more, so I can store in fridge and have it whenever I want. Hope you like it!

這個在韓國餐廳會吃到的前菜/配菜 -醬汁涼拌茄子,醬汁加上蒜香,惹味又開胃,拌飯吃也很不錯! 
將茄子蒸熟,再與醬汁拌勻即可,零難度的料理,好吃又健康!

Cut the eggplants crosswise into 2- inch pieces. Steam for about 8 minutes or until is soften but not mushy, let it cool slightly. Then tear the eggplants with your hands into thin pieces.

先將茄子洗淨,切約2吋長小塊,然後用大火蒸至軟身(容易用筷子插入)。待涼數分鐘,用手將茄子撕成幼條。

將蒜蓉,蔥花及調味料拌勻,加入茄子拌勻,放入雪櫃30分鐘後即可享用。

 

Mixed all the minced garlic, spring onion, chilli flakes and all seasoning together. Add in eggplants and mix well, chill in fridge for 30 minutes before serve.

Ingredients
  1. 2 medium eggplants
  2. 1 teapsoon minced garlic
  3. 1 - 2 tablespoons spring onion, chopped
  4. 2 tablespoons soy sauce
  5. 1 teaspoon fish sauce
  6. 1 teaspoon chilli flakes
  7. 1/2 teaspoon sugar
  8. 材料:
  9. 茄子 - 2條
  10. 蒜蓉 -1茶匙
  11. 蔥花 - 1-2湯匙
  12. 生抽 -2湯匙
  13. 糖 -1/2茶匙
  14. 魚露 -1茶匙
  15. 辣椒碎 -1茶匙
Instructions
