Bolognese Meat Sauce 意式肉醬
This classic Italian Bolognese meat sauce (Bolognese all Ragu), from the Emilia Romaga, which Bologna is the capital. The sauce is great with taglietelle or pappardelle pasta, which the pasta is wide enough to hold the sauce. Italian do have some rules for different sauce with different pasta. This also can be the sauce for classic lasanga. Simple but delicious.
Of course there are many different recipes for the meat sauce, but I just do the simple one with simple ingredients. I use mix beef and pork meat together, different portion of fats in protien can make the sauce better. Slowly cook and let the flavour come out deeply.
I love to make a large pot of sauce, then store it in different containers and freeze it. So when I don’t have time to cook, I just take one box of sauce, reheat it and serve with pasta. It is still very delicious and comforting.
這個波隆拿肉醬Ragu alla Bolognes 就是我們經常吃的意大利肉醬意粉的醬汁。來自意大利波隆拿城市而得名。這個肉醬可配各款意粉,特別是闊身如tagliette, fettucine寬條麵。因意粉較平較闊,可以沾滿更多醬汁。意大利人不會用來配長意粉的,因為太幼。這個肉醬又可做意式肉醬千層麵Lasanga,香濃美味。把多餘的醬汁放入冰箱存放,每次再煮熱醬汁,配意大利麵,超方便,簡單又美味!
Add olive oil in hot pan, add garlic, minced pork and beef. Season with salt and pepper, cook for 5 minutes to brown the meat. Then add in chopped onions and carrots for 5 minutes. Stir in red wine and cook until almost evaporated.
熱鑊後下油,下蒜蓉,豬肉及牛肉,下鹽及黑胡椒粉調味,用中火煮五分鐘。加洋蔥,紅蘿蔔,煮五分鐘。然後加入紅酒拌勻。
Then add 200ml of water, chopped tomatoes and tomatoes paste. Add a bit more salt and pepper, oregano and bay leaves. Bring it to boil and then let it simmer for an hour uncover. Stir from time to time prevent sticking.
再下蕃茄粒,蕃茄膏,及200毫升水拌勻,加多少許鹽,胡椒粉,牛至粉及月桂葉。煮滾後轉小火煮一小時便可,不用蓋上蓋,不時攪拌。
- 700 gram minced beef
- 300 gram minced pork
- 3 cloves of garlic, minced
- 1/2 onion, finely chopped
- 1 carrot, finely chopped
- 800 gram chopped tomatoes
- 3 tablespoons tomato paste
- 400ml red wine
- 3 bay leaves
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 材料:
- 免治牛肉 -700克
- 免治豬肉 -300克
- 蒜頭 -3瓣
- 洋蔥 -1/2個
- 紅蘿蔔 -1條
- 蕃茄粒 -800克
- 蕃茄膏 -3湯匙
- 紅酒 -400毫升
- 月桂葉 -3片
- 牛至粉 -1/2 茶匙
- 羅勒粉 -1/2茶匙
- Add oil in hot saucepan, cook garlic, minced beef and pork. Season with salt and pepper and cook for 5 minutes to brown the meat.
- Add carrots and onions, cook for 5 minutes.
- Stir in red wine, until almost evaporated, then add chopped tomatoes, tomatoes paste, 200ml of water and all the seasoning. Bring it to boil and let it simmer for 1 hour. Keep stirring from time to time.
