Duo Style Fried Rice 鴛鴦炒飯
Classic Hong Kong- Style fried rice that you can find in local Cha Chann Tang and Chinese restaurant. Also named as Yin -Yan Duo Style fried rice as the two colors of the sauce place as the shape of Yin -Yan. The red part is the tomato sauce, sweet and sour; the white sauce is made of milk, creamy and delicious.
I remember when I was kid, I always like this fried rice, one fried rice with two different sauce, what you want more?! The sweet and sour sauce is made of kethchup, you can put any meat you like, but for me, chicken thighs are the best. For the white part, you can add some shrimps and some vegetables with milk.
It is very easy dish and perfect for week day dinner. Kids will love it!
鴛鴦炒飯 – 港式茶餐廳和酒樓的經典炒飯,在蛋炒飯上淋上兩種不同的醬汁。小時候非常喜歡的炒飯,一碟炒飯有兩個選擇,實在令人非常滿足。
有紅色的蕃茄汁和白色的白汁。一邊酸酸甜甜,一邊香濃Creamy, 非常開胃又飽足。大人小朋友都會喜歡喔~
Use some soy sauce, salt , sugar and corn starch marinate the chicken for 30 minutes.
Add oil in hot wok, add in beaten eggs, cook until half way then add rice. Cook for 3 minutes, set aside.
Add some oil in a pan, cook the onion until softened, then add in chicken. When the chicken is cooked, add all the ingredients for the red sauce. Bring it to boil, then turn to low heat, add 1 teapsoon cornstarch + 2 tablespoons water, thickened the sauce. Set aside.
For the white sauce, add oil in hot pan, cook the shrimps and green peas. Then add all ingredients for the white sauce, bring it to boil, then turn to low heat and add in 1 teapsoon cornstarch + 2 tablespoons water, thickened the sauce. Set aside.
Put two sauce onto the fried rice. Enjoy!
先將雞肉切小塊,用少許鹽、糖、醬油和粟粉醃雞肉30分鐘。
燒熱鑊後下油,先下雞蛋,煮至半熟時下白飯,炒約三分鐘,盛起備用。
熱鑊後下油,先炒洋蔥至軟身,然後下雞肉炒至肉變色。然後下所有蕃茄醬汁的材料,煮沸後轉小火,然後下茨(1茶匙粟粉+2湯匙水),煮至醬汁濃稠,盛起備用。
白汁: 燒熱鑊後下油,先炒鮮蝦,然後下青豆再炒一炒再加入所有白汁的材料,煮沸後,下芡(1茶匙粟粉+2湯匙水)轉小火再煮至醬汁濃稠。
然後再將兩種醬汁倒在炒飯上即成!
- 2-3 bowls cooked rice
- 2 eggs, beaten
- 1/4 onion, sliced
- 150 gram chicken
