Chocolate and Strawberry Mousse Cake 巧克力草莓慕絲蛋糕
These are gorgeous looking cake, with chocolate sponge cake at the bottom, top with strawberry mousse and chocolate mousse, then have shiny chocolate glaze. It looks like those in fancy cake shops isn’t it?
I love mousse, it is like…mousse, soft but have the moussy texture. Strawberry and chocolate this unbeatable combination, give the sweet and little bit bitterness flavour.
Of course you can add different flavour or just one flavour mousse. For the base, you can bake your own sponge cake, or store-bought one, or even use the digestive biscuits as the base, like cheesecake.
This cake is not difficult to make, but need tons of patience, to wait the mousse set and go on the other layer. But once the cake is done, you will know all the effort you made is all soooo worth it. Hope you enjoy it like I do!

Cut the sponge with the mousse ring, I use 6-inch square one. Then place on the baking tray as the base.
For the strawberry mousse. In a bowl, mix the sugar and gelatin powder together, then stir in hot water, keep stirring until sugar dissolved. Add in strawberry puree and let it cool.
Then gently fold into the whipped cream, this is strawberry mousse. Pour the mousse onto the cake base, can add some strawberries on it. Chill in fridge for 3 hours until set.
For the chocolate mousse, melt the chocolate and set aside.In a small saucepan, let the milk and whipping cream to simmer, then add in egg yolks and sugar mixture, then add gelatine mixture (gelatine powder + 3 Tbsp water). Cook until the sugar dissolved, let it cool.
Then mix the chocolate sauce and milk-cream mixture together, this is chocolate mousse. Pour the mousse on top of the strawberry mousse. Chill in fridge for 3 hours.
For the chocolate glaze, in a small saucepan, mix the sugar, gelatine powder and 40ml water, bring it to boil. Then add in whipping cream and cocoa powder, mix well. Sift it then let it cool until no temperature. Pour on top of the chocolate mousse, chill in fridge until set. Then slice it before serve.

- 100 gram strawberry puree
- 15 gram sugar
- 5 gram gelatine powder
- 80 ml whipping cream
- 1 egg yolk
- 20 gram sugar
- 60 ml milk
- 100 ml whipping cream

- 70 gram sugar
- 5 gram gelatine powder
- 40 ml water
- 30 ml whipping cream
- 25 gram cocoa powder
