Chinese Pickled Cucumber 蒜拍青瓜
This is Chinese style pickled cucumber, which you can find in Chinese restaurants as appetizer. Crunchy, spicy, sour and sweet, very addictive! You can easily make at home in 15 minutes.
Mr P always love this pickled cucumber dish, everytime when we go to Chinese restaurant, he has to order it. Everytime I just can’t help but roll my eyes. Seriously!!!!!! This is the easiest dish on earth, are you sure you really want to order it?! It costs soooooooooo much more than cucumber, argh! So I always make it at home, keep him happy and hope one day he will stop ordering this in restaurant hahhaa!
It takes only 15 minutes to make, and you must have almost all ingredients at home. Please try it and hope you will love it, as appetizer or salad, YUM!

Wash the cucumber, then use a big knife to smash it and cut into small pieces. Add two teaspoons of salt and let it rest for 10 minutes. Drain well.
先將青瓜洗淨,然後用刀背把青瓜拍扁 (也可將青瓜切薄片,但直接拍扁會更入味)指天椒切碎。下兩茶匙鹽與青瓜拌勻,靜置10分鐘。青瓜會有水份流水,瀝乾水份。
Then put the cucumber in a big bowl, add all the ingredients and seasoning together, mix well. Cover with plastic wrap and chill in fridge for 30 minutes.
下所有調味料,蒜蓉,辣椒與青瓜拌勻,自己試味(所有份量可加減),然後用保鮮膜紙包好,放入雪櫃30分鐘即成!
- 2 cucumbers
- 1 teapsoon minced garlic
- 1 -2 red chill, chopped
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 -4 tablespoons vinegar
- 1 teaspoon sesame oil

- 蒜蓉 -1茶匙
- 指天椒 -1-2隻
- 調味料:
- 鹽 -1茶匙
- 糖 -1茶匙
- 麻油 -1茶匙
- 白醋 -3-4湯匙
